Almond Butter Cookies

ONLY 6 INGREDIENTS

If you live in the UK - bake off just starting up again and it always gets me in the mood to bake! These 6 ingredient cookies are super simple to make, but are easy crowd pleasers and a great snack!

Makes: 12 cookies. Prep and Cooking Time: 45 minutes.


INGREDIENTS

  • 100g ground almonds

  • 100g plain flour

  • 2 tsp baking powder

  • 130g smooth almond butter

  • 10 tbsp honey or maple syrup

  • Pinch of salt

METHOD

  1. Preheat the oven to 180C and line a baking tray with baking paper.

  2. Add the ground almonds, plain flour, baking powder and salt and mix together.

  3. Add in the almond butter and honey/maple syrup and mix together until a smooth batter is formed.

  4. Place the cookie dough in the fridge to chill for 20 minutes.

  5. Once chilled, remove the cookie dough from the fridge and scoop heaped tablespoons of the dough and use your hands to roll into balls.

  6. Place the balls on the baking tray and press down a little with a teaspoon to form a cookie shape.

  7. Bake for 12 minutes until golden brown. As the cookies cool down, they will continue to harden and enjoy!
