Avocado and Tahini Toast

AVO ON TOAST WITH A TWIST

We all love the classic avocado toast (well I definitely do!). How about adding a tahini twist? The tahini makes the avocado topping super creamy and also adds in a delicious flavour, as well as a further healthy fats/protein addition (tahini is simply blended sesame seeds!).

Serves: 1 for a main or 2 for a snack. Preparation Time: 5 minutes


INGREDIENTS
  • 1 large ripe avocado

  • 1 heaped tsp smooth and runny tahini

  • 1 tsp lemon juice

  • 1/4 tsp garlic granules

  • 1/4 tsp black pepper

  • 1/4 tsp sea salt

  • Seeds for topping (I chose pumpkin and flax seeds)

  • Toast of choice (I love sourdough or wheaten bread!)

METHOD
  1. De-stone and scoop out the avocado flesh into a bowl. Smash the avocado up using a fork.

  2. Add the tahini, lemon juice, garlic, black pepper and sea salt and mix until well combined.

  3. Toast your bread of choice and layer a generous amount onto each slice of bread.

  4. Top with seeds for a little crunch and enjoy!
