Avocado and Tahini Toast

AVO ON TOAST WITH A TWIST
We all love the classic avocado toast (well I definitely do!). How about adding a tahini twist? The tahini makes the avocado topping super creamy and also adds in a delicious flavour, as well as a further healthy fats/protein addition (tahini is simply blended sesame seeds!).

Serves: 1 for a main or 2 for a snack. Preparation Time: 5 minutes
INGREDIENTS
1 large ripe avocado
1 heaped tsp smooth and runny tahini
1 tsp lemon juice
1/4 tsp garlic granules
1/4 tsp black pepper
1/4 tsp sea salt
Seeds for topping (I chose pumpkin and flax seeds)
Toast of choice (I love sourdough or wheaten bread!)
METHOD
De-stone and scoop out the avocado flesh into a bowl. Smash the avocado up using a fork.
Add the tahini, lemon juice, garlic, black pepper and sea salt and mix until well combined.
Toast your bread of choice and layer a generous amount onto each slice of bread.
Top with seeds for a little crunch and enjoy!
