Banana and Oat Pancakes with blueberry compote, crunchy peanut butter, maple syrup and cacao nibs

BANANA PANCAKES

Nothing says the weekend like pancakes! These banana and oat pancakes are one of my favourite breakfasts because they are so quick and easy to make, I always have the ingredients in the cupboard and they are so versatile with what you can top them with!

Serves: 1. Preparation and Cooking Time: 10 minutes


INGREDIENTS

  • 1 banana

  • 1 egg

  • 1/4 cup oats

  • 1/4 teaspoon baking powder


METHOD

  1. Blend all the above ingredients together in a blender until smooth.

  2. Heat a non-stick frying pan (if required, use a little cooking oil spray) on a medium-low heat and tablespoon the pancake mixture onto the frying pan. I tend to use 1-2 tablespoons of mixture for each pancake. Fry for 2-3 minutes each side.

  3. Stack the pancakes and top as desired! My favourite is with a homemade berry compote/maple syrup/peanut butter/cacao nibs/seeds.
