BANANA PANCAKES
Nothing says the weekend like pancakes! These banana and oat pancakes are one of my favourite breakfasts because they are so quick and easy to make, I always have the ingredients in the cupboard and they are so versatile with what you can top them with!

Serves: 1. Preparation and Cooking Time: 10 minutes
INGREDIENTS
1 banana
1 egg
1/4 cup oats
1/4 teaspoon baking powder
METHOD
Blend all the above ingredients together in a blender until smooth.
Heat a non-stick frying pan (if required, use a little cooking oil spray) on a medium-low heat and tablespoon the pancake mixture onto the frying pan. I tend to use 1-2 tablespoons of mixture for each pancake. Fry for 2-3 minutes each side.
Stack the pancakes and top as desired! My favourite is with a homemade berry compote/maple syrup/peanut butter/cacao nibs/seeds.
