BBQ Pulled Jackfruit Tacos

This week, I have a #veganuary special recipe to share with you all - BBQ Jackfruit tacos! This is a recipe I have enjoyed waaaaa-y before I decided to embark on veganuary, as it is such a yummy plant based option to replace pulled pork or braised beef.


WHAT IS JACKFRUIT?

BBC goodfood explains that "Jackfruit are extremely large compound fruit made of numerous yellow ‘bulbs’ of flesh contained in a hard, knobbly exterior, with each bulb containing a seed". Jackfruit originates from Asia, and for cooking purposes the 'young green' jackfruit is best. Jackfruit in the UK is often found in a tin.


Jackfruit can achieve the same texture and consistency of many meat textures. Some examples are pulled pork, braised beef or shredded chicken.


Like all plants, jackfruit is filled with nutritious components, mainly vitamin C, dietary fibre and potassium. This means it may assist with reducing cholesterol levels, blood sugar levels and regulating blood pressure.



Serves: 4. Cooking Time: 40 minutes.


INGREDIENTS

  • 8-12 hard shell tacos (Depending how much extra filling you add in!)

  • 1 garlic clove

  • 1 white onion

  • 2 400g tin of young green jackfruit

  • 6 tbsp of BBQ sauce (make sure it's vegan if you require that!)

  • 1 tbsp tomato puree

  • 2 tbsp apple cider vinager

  • 1 tsp oregano

  • 1 tsp ground coriander

  • 1 tsp ground cumin

  • 2 tsp smoked paprika

  • 400g chopped tomatoes

  • 2 red bell peppers

  • 1 spring onion

METHOD
  1. Start by dicing the onion and frying in a pan with 1 tbsp olive oil on a medium heat until translucent. Finely slice the garlic and add into the pan.

  2. Dice the bell peppers and fry for 3-4 minutes until soft. Next add in the oregano, coriander, cumin and paprika.

  3. Add the chopped tomatoes, tomato puree, drained jackfruit and BBQ sauce and simmer for 20 minutes.

  4. Shred the jackfruit with a fork and simmer for a further 5 minutes.

  5. Add the jackfruit filling into the tacos and top with chopped spring onion - mix it up a bit with adding leaves, guacamole, sour cream (or alternative) etc.
