A DIFFERENT USE FOR YOUR SWEET POTATO
Sweet potatoes aren't just for fries! Sweet potatoes are a slow releasing carbohydrate (just likes oats or other wholegrains!), which makes them a perfect breakfast option! This means that they provide a slow release and a more sustained release of energy throughout they day [1] . You may think this recipe requires a lot of prep, but it should actually only take 5 minutes to make! The toppings I've given below can be adapted to however you wish as well to keep things interesting! Feel free to use different yogurt, fruit, seeds etc! It's customisable to you!

Serves: 1. Cooking and Prep Time: 5 minutes
INGREDIENTS
1 small sweet potato (about 125g)
A handful of frozen/fresh Berries
3 tbsp Greek or dairy free yogurt
1 tbsp nut butter (I used a crunchy peanut butter)
1 tbsp cacao nibs
1 tbsp maple syrup
METHOD
Peirce your sweet potato multiple times with a fork and place in a 700W microwave for 2 minutes 30 seconds (If your microwave is a lower wattage, add on 20 seconds, if it is a higher wattage, reduce time by 20 seconds).
If you are using frozen berries, place in a bowl and heat in the microwave for 1-2 minutes until they soften and juices flow.
Cut your sweet potato lengthways and start filling.
Place your yogurt in first, followed by your frozen or fresh berries, nut butter, cacao nibs and drizzle with maple syrup.
Eat while warm, and enjoy!
