CARROT CAKE BUT FOR BREAKFAST
Carrot cake overnight oats are an excellent way to ensure you start your day off well! Oat based breakfasts are great for providing that slow release of energy throughout the day and adding the grated carrot into it is perfect to squeeze in those extra portions of veg.

Serves: 1. Preparation Time: 5 minutes
INGREDIENTS
1/2 cup (50g) oats
1 tbsp chia seeds
1/2 cup grated carrots
1/2 tsp cinnamon
1 tbsp sultanas
1 tsp honey/maple syrup
1/2 cup (125ml) milk of choice
1 tbsp Greek yogurt
Pumpkin seeds/Sunflower seeds/Nut butter to top
METHOD
In a bowl mix together the oats, chia seeds, carrots, cinnamon and sultanas.
Then mix in the honey/maple syrup, milk and Greek yogurt.
Cover and leave in the fridge overnight (or at least for 4 hours).
Top with seeds and nut butter in the morning and enjoy!
