Chicken and Chorizo Harissa Linguine (+veggie alternative)

MY FAVOURITE PASTA
Fancy a deliciously creamy lingue pasta with a warm heat from harissa paste? This is the dish for you. For those who are unfamiliar, harissa is a spicy paste including a blend of hot chili peppers, garlic, olive oil, and spices. The exact recipe of harissa depends on what country you go to! For those here in the UK, you can buy harissa paste in large supermarkets fairly easily!
As someone who doesn't label their diet, I enjoy both a meat version and a veggie version of this pasta. To be honest it normally depends what is in the fridge! Therefore, this makes this dish perfect for whatever your dietary requirements are, or if you are cooking for those who do have specific requirements!

Serves: 4. Cooking Time: 25 minutes
INGREDIENTS
330g linguine pasta
1 large white onion (diced)
2 garlic cloves (crushed)
1 courgette (sliced in semi circles)
1 tsp mixed herbs
4 tsp harissa paste
220ml double cream (I personally use elmlea as its a lighter option to real cream. If you are vegan Elmlea also offer a plant based option)
4 handfuls of spinach
For chicken and chorizo option:
2 large chicken breasts (diced)
130g diced chorizo (I use a pre-cooked option that you can eat ready hot or cold)
For veggie alternative:
2 tins butter beans
200g mushrooms (sliced)
METHOD
Start by preparing your vegetables as directed above.
Heat 1 tbsp olive oil in a large pan/wok over a medium heat and fry your onion for 2-3 minutes until soft and translucent.
(meat option only) Next add your chicken to the pan and cook for a further 5 minutes until chicken is cooked through.
While the chicken is frying, cook your linguine according to packet instructions.
Next add your courgette (+mushrooms if using), garlic and mixed herbs to the pan and fry for 3-4 minutes until soft.
Then add in your chorizo/butter beans and stir in your harissa paste, so all components are well covered.
Add in your cream and allow to simmer for 5-7 minutes.
Drain your pasta and stir it into the pan.
Add your spinach and allow to wilt through your creamy harissa pasta.
