Chicken Gyros with Greek Salad and Tzatziki

Following my week holiday in the beautiful Crete, the food out there is incredible - but why should we only enjoy it in Greece? I have brought the delicious flavours of Greek food in this latest recipe!
I love this recipe as it is great for a dinner party or family dinner. The reason why it's so great is the majority of the dishes can be prepared in advance! Literally, the chicken marinates in advance, the tzatziki and Greek salad can be prepared in advance and set in the fridge. So when it comes to your guests arriving, all you need to do is cook your chicken, grill your halloumi and warm your pitta!
Now veggies... don't be put off with the fact it has 'chicken' included. This recipe has so many elements you can just skip out on the chicken and put halloumi in it's place!

Serves: 4. Cooking Time: 1 hour plus marinating time for chicken
INGREDIENTS
Chicken:
4 chicken breast fillets (diced)
3 tbsp authentic Greek yogurt
1 tbsp white wine vinegar
1 tbsp olive oil
3 tbsp lemon juice
3 garlic cloves (crushed)
1 heaped tbsp dried oregano
1 tsp salt
1 tsp black pepper
Tzatziki:
1 cup of full fat authentic Greek yogurt
1 1/2 cucumbers (coarsely grated)
1 tbsp olive oil
1 tbsp lemon juice
1 garlic clove (crushed)
Salt and pepper
Greek Salad:
4 salad tomatoes (quartered)
1/2 cucumber (sliced into quarters)
1/2 red onion (thinly sliced)
85g feta (diced)
200g olives (I use large green olives or Kalamata)
1 tbsp dried oregano
3 tbsp olive oil
Make it into a feast? Why not add:
Pitta Bread
Grilled Halloumi
Shredded iceberg lettuce
Bowl of sundried tomatoes
Air-fried chips
Extra olives
METHOD
Start by making the marinade for your chicken. Place the chicken marinade ingredients into a bowl and mix together. Place the mixed marinade ingredients and the diced chicken into a zip lock bag and mix to ensure the chicken is well coated. Leave to marinate for 2-3 hours.
Next make your tzatziki, grate your cucumber then place the grated cucumber into a tea towel and proceed to squeeze out all the liquid. Once you have done this, place the cucumber into a bowl and add in the remainder of the tzatziki ingredients and mix together. Set this in the fridge until serving.
Now make your Greek salad. Simply prepare the Greek salad ingredients and combine together in a bowl with the olive oil. Set this in the fridge until serving.
Once your chicken has been marinated. Preheat your grill to a medium high heat and grill your chicken for 8-10 minutes, rotating your chicken half way, to ensure it is fully cooked.
Serve up with warm pitta and I would definitely advise making it into a feast by adding, grilled halloumi, sundried tomatoes, iceberg lettuce, air-fried chips and extra olives!
