Chickpea, Feta and Mint Salad

SUMMER SALAD

With the summer now in full swing, we can start enjoying this beautiful summer weather more. I know plenty people will be cooking up a BBQ, spending time over fresh summer dishes to compliment the warm weather or wanting a quick summer meal on the go! This week I have brought an easy, fresh and delicious summer vibes chickpea, feta and mint salad - perfect on its own or as a side!


Serves: 2 for a full portion and 4 as a side salad. Preparation Time: 10 minutes


INGREDIENTS

  • 1 400g can chickpeas (drained)

  • 1/3 cucumber (quartered)

  • 8 cherry tomatoes (quartered)

  • 1/4 of a red onion (diced)

  • 3 tbsp olive oil

  • 1 tbsp lemon juice (or juice from half a lemon

  • 100g Feta

  • 1 handful fresh mint

  • 1 handful fresh chives

  • Salt and Pepper to taste


METHOD

  1. Prepare the cucumber, tomatoes and onion as directed above.

  2. In a large bowl, mix the prepared vegetables with the chickpeas, mint, chives, salt and pepper, lemon juice and olive oil and then gently fold in the feta cheese leaving a little to sprinkle over the top and enjoy!
