Chocolate Beetroot Traybake

YES IT WORKS

Chocolate Beetroot Traybake! Now, I'm not one for adding in vegetables to a cake to make it 'healthy' but to make it taste great! This traybake is a simple one bowl recipe, and the addition of the beetroot makes the traybake super moist (sorry if you hate that word, but it's true!). The traybake has an intense chocolate flavour from cacao powder but remains light and fluffy.


The addition of beetroot also means the cake is higher in it's fibre content which NHS guidelines advise we should be consuming 30g daily [1]. Some trials has also shown that beetroot has a compound called dietary nitrate, which can relax arteries allowing blood to flow with less residence and therefore reducing blood pressure [2].

Cooking Time: 35 minutes. Serves: 12


INGREDIENTS

  • 100g dairy or dairy-free butter

  • 160g coconut or light brown sugar

  • 200g cooked and peeled beetroot (grated)

  • 2 eggs

  • 60ml milk of choice

  • 200g plain flour (I use white spelt flour but all purpose flour also works)

  • 1tsp baking powder

  • 50g cacao or unsweetened cocoa powder

  • 1/2 tsp salt

  • 50g dark chocolate

METHOD

  1. Preheat the oven to 200C and line a square baking tin with baking paper

  2. In a mixing bowl, cream your butter and sugar together, then with a whisk gradually add your beetroot, eggs and milk until well combined,

  3. Next add your flour, baking powder, cacao powder and salt and combine well.

  4. Transfer your mixture into your prepared baking tin and cook for 20-25 minutes (or until a skewer comes out clean when inserted into the centre of the traybake).

  5. Once cooked, leave to cool for 10 minutes before transferring it to a cooling rack. Melt your dark chocolate and drizzle over the top. Enjoy!
