Chocolate Peanut Butter Stuffed Dates

MY GO TO SNACK
Hands up for another no-baking recipe?! These chocolate covered, peanut butter stuffed dates are so perfect for a sweet snack/dessert/energy boost! I love the sweetness of the dates and the saltiness of the nut butter (along with added chocolatley deliciousness!).
These dates are great as you can add in any type of nut butter you like (or why not go rouge - and add in chocolate spread for a full on chocolate treat!) and you can vary the dates you use depending on what suits you. I love medjool dates as they are larger and super sticky and sweet, but you can opt for a smaller type of date or dried dates and soak them in water (and that option is much cheaper too!).
Do you like a toffee consistency in your snack? Putting these dates in the freezer, makes the treat have a harder toffee texture. This may be an unpopular opinion but these are pretty much on par with a snickers (and yes they are my go to in a tub of celebrations!).
Makes: 6. Preparation Time: 15 minutes. Chilling Time: 30 minutes-1 hour
INGREDIENTS
6 medjool dates (you can also use deglet noor dates which are smaller, or if using dried dates - then soak in water for 10 minutes prior)
3-6 tsp peanut butter (or any other nut butter)
50g dark chocolate (I love 85% cocoa solid)
Sea Salt
METHOD
Slice open the each date and remove the stone.
Insert 1/2-1 tsp of nut butter in each date.
Break up the chocolate into a bowl and melt over a pot of simmering water.
Dip each date into the chocolate, until well covered and sprinkle with a dash of sea salt
Place dates onto a small tray and place in the fridge or freezer (if wanting a toffee like consistency) for 30 minutes to 1 hour.
Enjoy! (If not eating straight away, store the dates in fridge or freezer).
