Christmas traybake with sausages, leek, Brussel sprouts, mushrooms, chestnuts and gravy

A CHRISTMASSY TRAYBAKE

Fancy some of those holiday flavours without the hassle of cooking a full christmas dinner? This traybake is prepped in 10 minutes and cooked in 30 minutes - perfect for a midweek dinner.

Christmas traybake with sausages, leek, Brussel sprouts, mushrooms, chestnuts and gravy

Serves: 2. Preparation Time: 10 minutes. Cooking Time: 30 minutes


INGREDIENTS

  • 2 baking potatos

  • 200g chestnut mushrooms

  • 1 leek

  • 200g brussel sprouts

  • 150g cooked chestnuts

  • 6 sausages of choice

  • 1 tbsp olive oil

  • 0.5 tsp rosemary

  • 0.5 tsp sage

  • Salt and pepper

  • Gravy to serve


METHOD

  1. Preheat the oven to 180 degrees.

  2. Dice the potatos, slice the mushrooms and leek and trim the brussel sprouts.

  3. Place the vegetables on a bake tray, along with the chestnuts.

  4. Drizzle with oil and sprinkle with salt, pepper, sage and rosemary - toss together.

  5. Add the sausages in the centre of the baking tray and cook for 30 minutes.

  6. Serve immedietly with a side of gravy
