'Cowboy Caviar' Salad

MY SPIN ON THIS TIKTOK RECIPE

If you are a social media fan, you will have seen the viral videos of 'cowboy caviar' recipes being shown on your feed as you scroll! Having tried a few out myself, I have created my own spin on the recipe! I have made this for a couple of BBQ's now as a big salad on the side and it has been an easy crowd pleaser!

Serves: 4 as a main and 6-8 as a side. Preparation Time: 10 minutes

INGREDIENTS

  • 1 400g tin black beans

  • 1 400g tin pinto beams

  • 1 cup sweetcorn

  • 2 bell peppers

  • 1 red onion

  • 1 avocado

  • 50g jalapenos (I use ones from a jar)

  • Generous handful of fresh coriander

Dressing

  • 4 tbsp lime juice

  • 5 tbsp extra virgin olive oil

  • 5 tbsp white wine vinegar

  • 1 tbsp fajita seasoning

  • 2 tbsp maple syrup

  • Salt and pepper

METHOD

  1. Prepare all your vegetables for the main salad, then place into a large bowl and combine together.

  2. Add all the dressing ingredients into a jar and shake well to combine.

  3. Pour the dressing over the salad and combine well together. Enjoy!
