Cranberry and White Chocolate Scones

A FESTIVE TREAT

A classic delicious scone recipe with a festive twist! Perfect for an afternoon snack with a hot drink after a cold wintery walk!

Servings: 8 Scones. Preparation Time: 20 minutes. Cooking Time: 10 minutes


INGREDIENTS

  • 350g self raising flour

  • 1 tsp baking powder

  • 85g butter

  • 3 tbsp caster sugar

  • 175ml milk

  • 1 tsp vanilla extract

  • 100g white chocolate chunks

  • 100g dried cranberries

  • Beaten egg to glaze

METHOD

  1. Pre-heat your oven to 220C/200 fan/430F.

  2. In a food processor, add your self-raising flour, baking powder and butter (cubed) and blitz until it becomes a breadcrumb consistency.

  3. Pour your flour mixture into a large bowl and mix in the sugar.

  4. Heat the milk in the microwave for approx. 1 minute so it is warm (but not hot)

  5. Add the vanilla extract to the milk and mix together.

  6. Make a well with the dry ingredient mixture and add your milk mixture and combine with a spatula until you have a wet dough.

  7. Next fold in your white chocolate chunks and cranberries into the mixture.

  8. Lightly dust your work surface with flour and tip the dough onto it. Fold the dough 3-4 times (be careful not to over work), then roll out to about 4-5cm thick.

  9. Use a 5cm cookie cutter to cut out your scones, then re-roll the leftover dough and continue to cut out further scones until all the dough is used up.

  10. Place your scones on a baking tray and glaze with a beaten egg.

  11. Bake for 10 minutes then enjoy with butter/cream/jam!
