Servings: 8 Scones. Preparation Time: 20 minutes. Cooking Time: 10 minutes
INGREDIENTS
350g self raising flour
1 tsp baking powder
85g butter
3 tbsp caster sugar
175ml milk
1 tsp vanilla extract
100g white chocolate chunks
100g dried cranberries
Beaten egg to glaze
METHOD
Pre-heat your oven to 220C/200 fan/430F.
In a food processor, add your self-raising flour, baking powder and butter (cubed) and blitz until it becomes a breadcrumb consistency.
Pour your flour mixture into a large bowl and mix in the sugar.
Heat the milk in the microwave for approx. 1 minute so it is warm (but not hot)
Add the vanilla extract to the milk and mix together.
Make a well with the dry ingredient mixture and add your milk mixture and combine with a spatula until you have a wet dough.
Next fold in your white chocolate chunks and cranberries into the mixture.
Lightly dust your work surface with flour and tip the dough onto it. Fold the dough 3-4 times (be careful not to over work), then roll out to about 4-5cm thick.
Use a 5cm cookie cutter to cut out your scones, then re-roll the leftover dough and continue to cut out further scones until all the dough is used up.
Place your scones on a baking tray and glaze with a beaten egg.
Bake for 10 minutes then enjoy with butter/cream/jam!
Happy Baking!
