A DECIDANT DESSERT

Oooo this is a recipe worth sharing! Now that most of the nation are in their homes for the foreseeable future, how about treating yourselves or your household to a little delicious dessert this weekend!? I also love using this recipe when I have people over for dinner, as you can prepare it hours in advance, meaning you can concentrate on your main meal and entertaining instead of having to worry about dessert as well! - something to bare in mind after lock down ends!

Not only is this recipe great for making in advance, it is also very quick and simple to make. With minimal ingredients and stages needed! It can also be made vegan friendly - I have made both vegan friendly and non vegan options of this dessert, and both work wonderfully!

I hope you are all doing well, and keeping yourselves safe at this time!

Serves: 4 people. Prep Time:10 minutes. Chill Time: min 3 hours

INGREDIENTS

  • 100g dark chocolate

  • 4 tbsp maple syrup or clear honey

  • 2 tsp vanilla extract

  • 1/4 tsp find salt

  • 35-40ml milk of choice (I usually use a dairy free milk, however regular cow milk also works)

  • 2 1/2 tbsp raw cacao or cocoa powder

  • 2 ripe avocados

METHOD
  1. Setting aside 15g chocolate for decoration, and break the rest of the dark chocolate into squares and melt in a heatproof bowl set over a pan of simmering water.

  2. Next stir in the maple syrup/honey, vanilla essence, milk of choice, salt and the cocoa powder (sieved) until smooth.

  3. Scoop the flesh out of the avocados and add into a blender or food processor along with the chocolate mixture. Blend until silky smooth. Divide the mixture between 4 small serving glasses (I utilise used Gu pots!). Chill for at least 3 hrs, or for up to 12 hrs.

  4. Finally, just before serving, use a vegetable peeler to scrape the edge of the reserved chocolate to make long shards to scatter on top of the mousse.

Happy Baking!
