Tahini Sauce

You may have read my nourishment bowl recipe, but have you ever found that when you make a clean eating recipe, you just want some sauce - a different texture - to drizzle over? Or maybe you're a nut butter addict, but fancy something different that you can use in savoury recipes as well as sweet recipes? Well look no further - Tahini is your answer!

ABOUT

Tahini is a thick, almost paste-like sauce which is made purely through sesame seeds and a little oil (depending on how runny or thick you would like the sauce). It is similar to a smooth nut butter in texture (such as almond butter), and is rich and creamy. It is often used in middle-eastern cooking due to its deep earthy flavour.

HEALTH BENEFITS(1)

1) High in Calcium

2) High in Healthy Fats - sesame seeds contain 55% oil and 20% protein and are high in omega-3 and omega-6. Due to the high oil content, this is why tahini is particularly smooth in comparison to other nut and seed butters.

3) Helps Lower Cholesterol (which naturally leads to other health benefits, such as lowering blood pressure) - Sesame seeds rank highest in cholesterol-lowering phytosterols among 27 different nuts, seeds, grains etc. tested

4) Improved Immunity -Tahini has a ton of minerals, which boosts the immune system. Tahini is high in zinc, selenium, iron, and copper content which helps fight viral and bacterial infections and facilitate the production of germ-fighting white blood cells.

5) Nutrient Absorption - although high in calories (approx. 90 calories per tablespoon), tahini boosts nutrient absorption in the gut which is essential for weight loss, meaning your food goes further to keeping you healthy.

So my personal reason for deciding to try out my own tahini recipe was - if I'm honest - I could never find it in every day supermarkets, and on the rare occasion I did, it was super expensive! I am also a huge nut butter fan, so the taste and texture of tahini is perfect for me! So I decided to make my own and I'd advise you to do the same!

Sesame Seeds and Olive Oil in Food Processor

Tahini Sauce

Makes: approx. 1/2 cup. Preparation and Cooking Time: 30 minutes

INGREDIENTS

  • 140 grams hulled sesame seeds (it is important to use hulled, rather than unhulled, otherwise the flavour will become more bitter)

  • 3 tablespoons of light olive oil (use more or less depending on your preferred consistency)

METHOD

  1. Place sesame seeds on grease proof paper on top of an over dish and bake at 350 C for 10 minutes. This helps bring out the flavour of the sesame seeds.

  2. Allow sesame seeds to cool for 20 minutes.

  3. Once cooled, add sesame seeds to a food processor, and pulse for 2-3 minutes.

  4. Slowly add desired amount of olive oil and enjoy!

Tips

  • Store in the fridge

  • More oil is better for sauces or dips.

  • Less oil is better for baking recipes.

Happy Cooking!
