Festive Spiced Vegan Banana and Pecan Muffins

AN EASY FESTIVE CROWD PLEASER

Another Christmas recipe heading your way! Although, it doesn't really need to be Christmas for these spiced vegan banana and pecan muffins! They are an easy crowd pleaser and almost healthy enough for breakfast?! These muffins are spiced with the warming flavours of cinnamon, ginger and nutmeg and are lower in sugar as we can take advantage of the sweetness from the bananas! I use oil instead of butter in this recipe to make it vegan, but you wouldn't know the difference! They are super light and fluffy - you could easily go for a 2nd!

Makes: 12 muffins. Prep Time: 10 minutes. Cook Time: 25 minutes.


INGREDIENTS

  • 4 bananas

  • 1/2 cup vegetable or sunflower oil

  • 1 tsp vanilla essence

  • 100g coconut or light brown sugar

  • 300g self raising flour

  • 1 tsp bicarbonate of soda

  • 1 tsp ground cinnamon

  • 1 tsp ground ginger

  • 1/4 tsp ground nutmeg

  • 50g chopped pecan nuts + 12 half pecan nuts

METHOD
  1. Preheat the oven to 180C and line a cupcake tray with cupcake liners.

  2. In a mixing bowl, mash the bananas. Then add the sunflower oil, vanilla essence and sugar together.

  3. Next sieve in the flour, bicarbonate of soda, cinnamon, ginger and nutmeg.

  4. Fold in the chopped pecan nuts.

  5. Divide the mixture in between the 12 cupcake liners and place a half pecan nut on top of each.

  6. Bake for 25 minutes and leave to cool before enjoying.
