Fluffy Cinnamon Pancakes

FLUFFY PANCAKES

One of my favourite times of the year is almost upon us... Pancake Day! So why not add a twist to your pancake day favourites, by making these fluffy cinnamon pancakes. They are similar to your traditional American fluffy pancakes with that cinnamon twist!


These pancakes can be easily made dairy free (I actually opt for a dairy free option as that's the type of milk we store in the house!) and the toppings can be completely customised to you! Some other toppings that go great with cinnamon are: stewed apple, fresh berries, baked pear, lemon and sugar - the list goes on!

Serves: 3-4 people. Preparation Time: 5 minutes. Cooking Time: 15 minutes


INGREDIENTS
  • 300g self-raising flour

  • 1 tsp baking powder

  • 1 tbsp sugar

  • 1 tsp cinnamon

  • 2 eggs

  • 300ml milk of choice (I opt for soya milk)

  • Fry-light oil spray (I use my coconut oil spray for these pancakes!)

  • Toppings (optional): banana slices, flaked almonds, icing sugar and honey/maple syrup to drizzle

METHOD
  1. In a large bowl, mix together the flour, baking powder, sugar and cinnamon with a handheld whisk (to get out any lumps).

  2. In a separate bowl, whisk together the eggs and milk before pouring into the flour mixture. Combine well with a spoon.

  3. Spray your oil spray into a frying pan and place on a medium heat.

  4. Place 1-2 tbsp's of your pancake batter per pancake and cook for 2 minutes per side.

  5. Top with topping suggestions above or toppings of choice!
