FLAPJACKS WITH EXTRA FIBRE

Ready to bake in 10 minutes, with the addition of fruits and seeds to increase your fibre intake!

Serves: 16. Preparation and Cooking Time: 50 mins


INGREDIENTS

  • 350g rolled oats

  • 175g butter

  • 175g honey or golden syrup

  • 175g light brown sugar

  • 100g dried fruit/seeds (I used a mix of pumpkin seeds, sunflower seeds, sultanas and cranberries)

  • Pinch of ground ginger

  • Pinch of ground cinnamon


METHOD

  1. Start by pre-heating your oven to 150C (conventional)/130C (fan). Prepare a 20cm square baking tin with baking paper.

  2. Melt your butter over a low heat. Once melted, add your honey/golden syrup and sugar and heat gently till all the sugar is dissolved.

  3. In a large bowl, combine the oats, dried fruit/seeds, ginger and cinnamon.

  4. Pour in your butter mixture and combine well.

  5. Pack the mixture into the baking tin and press down with a wooden or metal spoon.

  6. Bake for 40minutes, until the top is golden brown.

  7. Leave to cool for at least 15minutes before removing from the tin and cutting into 16 squares.
