Fudgy Vegan Brownies

SUPER FUDGY

After quite a while off this platform, I am back and so excited to share with you a new recipe. I am loving having the time again to dedicate to making new recipes and sharing them with you!


These brownies are super fudgy and chocolatey. They also contain really easy ingredients which mean making something that's vegan doesn't need to be a hassle! One of my top tips is never spend loads of money on special 'vegan' dark chocolate, as the majority of dark chocolate has no milk in anyway - just check the ingredients list at the back!

Makes: 12 brownies. Preparation and Cooking Time: 60mins


INGREDIENTS
  • 250g dark chocolate

  • 170g plain flour

  • 150g caster sugar

  • 20g cocoa powder

  • 1tbsp baking powder

  • Pinch of sea salt

  • 80ml dairy free milk

  • 1tsp vanilla essence

  • 1.5 flax eggs (1.5 tbsp milled flaxseed and 4.5 tbsp water mixed together)

  • 125ml melted coconut oil

METHOD

  1. Start by pre-heating your oven to 165C and lining your square baking tin (roughly 20cm) with baking paper.

  2. Make your flax egg by combining 1.5tbsp milled flaxseed and 4.5 tbsp water and mix together, leaving to set for approx. 5 mins)

  3. Melt your dark chocolate in a mixing bowl over a saucepan of boiling water.

  4. Sieve the flour, sugar, baking powder, salt and cocoa powder into a separate mixing bowl and mix until combined.

  5. Next add your melted coconut oil, vanilla essence, dairy free milk and flax egg to the flour mixture, and slowly fold together.

  6. Finally add in your melted chocolate, and once well combined, pour evenly into your baking tin.

  7. Bake your brownies for 30-35 minutes until a skewer comes out almost clean

  8. Leave to cool before cutting (this is so the brownie can 'firm up'), and enjoy!
