Goats Cheese and Beetroot Salad

SWEET AND SALTY SALAD

A beautiful quick and easy salad which is perfect for your lunch prep or as a summary BBQ side! I am a big sweet and salty fan and the sweet beetroot and the salty cheese and walnuts is perfect! No cooking is involved and it takes less than 10 minutes to come together!

Serves: 2 as a main and 4 as a side. Cooking Time: 10 minutes

INGREDIENTS

  • 60g rocket leaves

  • 400g cooked beetroot (chopped into bite sized chunks)

  • 150g goats cheese (chopped into bites sized chunks)

  • 6 heaped tbsp chopped walnuts

  • 3/4 cucumber (chopped into quarters)

  • 1 small red onion (thinly diced)

  • Balsamic vinegar to drizzle

  • Salt and pepper

METHOD

  1. Prepare your ingredients as directed above.

  2. In a large bowl combine all the ingredients together (leave a small amount of the goats cheese, beetroot and walnuts for placing on top at the end).

  3. Add your balsamic vinegar and toss the salad together.

  4. Plate up your salad, and decorate the top of the salad with the remainder of your beetroot, cheese and walnuts.
