Harissa, Hummus and Avocado Open Sandwich

A BIT OF SPICE TO YOUR SANDWICH
Sandwiches can be boring huh? either a bit dull in flavour or a bit dry? Well why not 'pimp' your sandwich with this flavour-filled and spice kicked open sandwich? The harissa paste is a type of spiced hot chilli paste which is why you only need a small amount of it but the spice kick is soothed by the layer of hummus and avocado. Rocket is perfect for topping this open sandwich as it has a strong 'pepper-y' taste which compliments the rest of the ingredients perfectly.
I have left the ingredients list non-specific in the quantities as depending on the type of bread you are using and how many slices you are making the quantities can be different. However hopefully in the method I have provided a guide of how much of each ingredient you should use.

Serves: 1-2. Preparation Time: 5 minutes
INGREDIENTS
Sliced bread of your choice (I either use sourdough, rye or wheaten bread)
Hummus
Harissa paste
1 avocado
Rocket
Salt and Pepper
METHOD
Slice your bread and start spreading a very thin layer of harissa paste (this should be between 1/2 a tsp to 1 tsp depending on the size of your slice of bread).
Next spread 1-2 tsp's of hummus onto your slice of bread (again depends on the size of your bread).
Leaving your bread flat (the 'open' part of the 'open sandwich'), top with slices of avocado, a sprinkling of sea salt and pepper and a handful of rocket.
