Hoisin Lentil Lettuce Cups

HOISIN LENTIL CANAPES

Having friends over and wanting to provide a starter which is super quick to make, and won't take much time? Or maybe you're doing an array of small canape or tapas style dishes? Or maybe you just want something super tasty for your midweek dinner! Whichever motive is yours, these hoisin lentil lettuce cups are for you! I love Asian inspired foods, and hoisin sauce is one of my favourites, because I have such a sweet tooth and it is perfect when combined with these lentils and veggies!

Combine all the ingredients together

Serve in mini lettuce cups

Serves: 4 people as a starter, 2 as a main. Cooking Time: 20 minutes

INGREDIENTS

  • Olive oil

  • 1/2 red pepper (diced)

  • 1/2 green pepper (diced)

  • 2 garlic cloves (crushed)

  • 1 white onion (diced)

  • 1 heaped tsp ground ginger

  • 1 tsp ground coriander

  • 1/2 cup red lentils

  • 1/3 hoisin sauce

  • 1 tbsp soy sauce

  • 2-3 heads of mini gem lettuce

  • Optional for garnish: peanuts and fresh coriander

METHOD

  1. Heat a drizzle of oil over medium-high heat in a large pan. Add the onion, red and green peppers and garlic and cook until soft.

  2. Add the garlic, ginger, coriander, and lentils and combine and cook, for a minute.

  3. Add 3/4 cup cold water and simmer for 10 minutes, until the lentils are tender, all water has evaporated.

  4. Add the hoisin sauce and soy sauce. Cook for another minute or two, combining everything well and heat through.

  5. Separating the leaves of the mini gem lettuce and full each leave with 1-2 tbsp full of the lentil mixture and serve with optional garnishes.
