Maple Oat Fruit Crumble Topping + Optional Apple Filling

A CLASSIC CRUMBLE
As autumn is well and truly upon us, nothing says warming and delicious like a fruit crumble. I love making fruit crumbles, because they are so delicious as a pudding or snack, as well as being able to provide so much variety!
At the moment my favourite go to crumble filling is a classic cinnamon apple filling (most likely because my parent's have a huge apple tree so I have apple's of plenty!). However I also love mixing it up, by throwing some raspberries in there or some sultanas.
This crumble mix is packed with whole grains from the oats and wholemeal flour - which as discussed in my previous blog post is high in fibre and beta glucan (see previous post for further information here).
The sweetness of the crumble topping uses no refined sugar - it comes purely from the maple syrup, and for the filling I will use a little coconut or brown sugar to sweeten the sharp cooking apple flavour.


Serves: 6. Cooking and Preparation Time: 45 minutes
INGREDIENTS
For Crumble Topping
1.5 cups of rolled oats
1/2 cup wholewheat plain flour
2 tsp cinnamon
4 tbsp maple syrup
3 tbsp of melted coconut oil or butter
For Apple Filling
4 large cooking apples (5 apples if smaller in size) - cubed
2 tsp cinnamon
2 tsp brown/coconut sugar
METHOD
Preheat oven to 190C.
Mix together the oats, flour and cinnamon in a mixing bowl.
Make a well and pour maple syrup and butter/coconut oil into the centre, then mix crumble together with a hand whisk.
(If using) In a separate bowl, mix your cubed apple, cinnamon and sugar of choice together then place in your oven proof dish.
Top the apple with crumble topping and place in the oven. Bake for approx 35 minutes.
Serve with ice-cream, yogurt and/or fresh berries and enjoy!
