Mexican Lunch Box Salad

A FLAVOUR FILLED LUNCH
Another easy and delicious Mexican inspired salad to spice up your lunches this week! It's basically a burrito bowl which is one of my favourites, so I am sure it will get you excited for lunchtime!

Serves: 3 Preparation Time: 10 minutes. Cooking Time: 30 minutes
INGREDIENTS
1 Iceberg lettuce (chopped)
1/2 cucumber (sliced and halved)
12 cherry tomatoes (halved)
1x 400g tin of black beans/pinto beans (or a mix of both)
1 tbsp chipotle paste
180g cooked quinoa
2 bell peppers (sliced)
1 red onion (sliced)
1/2 tsp smoked paprika
1/2 tsp cumin
1 cup sweetcorn
Grated cheese
Olive oil
METHOD
Preheat the oven to 180C.
Slice the peppers and red onion and place in a roasting tray with a drizzle of olive oil, smoked paprika and cumin and toss together, before cooking in the oven for 30mins until soft.
Next, rinse and drain your beans and place in a pan over a medium heat along with a drizzle of olive oil. Stir in your chipotle paste and fry for 2-3 minutes until beans are slightly softer and fragrant.
Prepare the rest of your ingredients as directed above.
Once beans and peppers/onions have cooled, prepare your lunch box. Assemble your lettuce first and top with beans, peppers/onions, tomatoes, cucumber, sweetcorn, quinoa and cheese.
Store in airtight containers and consume over the next 3 days!
