Mixed Bean and Hummus Salad

NO COOK LUNCH
This week, I've written up one of my easiest lunch box recipes! Why is it so easy? It literally involves no cooking and you just "chuck it all in"! Plus the ingredients are super cheap to buy! You can't say eating healthy costs or takes too much time when you have a recipe like this!

Makes: 3 lunches. Preparation Time: 10 minutes
INGREDIENTS
100g mixed leaves lettuce
1 tin mixed beans (drained and rinsed)
1/3 cucumber (quartered)
100g cherry plum tomatoes (halved)
60g black olives
1/2 cup sweetcorn
200g tub of hummus
2 tbsp olive oil
1 tbsp white wine vinegar
1 tbsp lemon juice
1/2 tsp black pepper
1/4 tsp salt
1 tsp oregano
METHOD
Prepare 3 lunch boxes and divide the lettuce equally.
Prepare your beans, cucumber and tomatoes as directed above.
In a bowl, place your beans, cucumber, tomatoes, olives and sweetcorn and mixed together.
In a separate bowl, mix your olive oil, vinegar, lemon juice, pepper, salt and oregano together. Then pour over your bean mixture and combine well.
Divide your bean mixture into your 3 lunch boxes (which are already prepared with the lettuce).
Heap a generous tbsp of hummus at the side of each portion and enjoy!
