My Favourite Savoury Porridge

Savoury Porridge - I honestly think it is one of the most underrated breakfast foods! As you know, I am a big oat fan, as they are something that fills me up and it quickly fuels me for the day ahead! This porridge is packed full of nutrients (such as vitamin A and iron from the spinach and kale), protein (from the egg and soya milk) and healthy fats (from the avocado), all vital components of a healthy diet and also comes together as a super yummy combo.

Serves: 1. Cooking Time: 10 minutes


INGREDIENTS

- 1/2 cup rolled oats

- 1/2 cup boiled water

- 1/4 cup soya milk (or milk of choice!)

- Pinch of Salt and Pepper

- 1 handful of kale or spinach

- 1 egg

- 1/2 avocado

- Pinch of chilli flakes (optional)


METHOD

  1. Combine oats, soya milk and water in a sauce pan and place over a medium heat. Add more or less oats/liquid depending on desired consistency!

  2. Add in kale/spinach, salt and pepper and stir in well, until kale/spinach is wilted.

  3. Fry one egg in a separate pan, and slice 1/2 an avocado into slices.

  4. Place porridge into a bowl, and top with egg, avocado slices and chilli flakes and extra black pepper.
