No-Bake Protein Bars

EASY PROTEIN BARS

Whether you are on a 'New Year Health Kick' or not, one of my biggest tips for living a healthier lifestyle is to have healthier snacks ready and available! Of course there is nothing wrong with any other types of foods but if you are wanting to increase your protein intake to compliment your exercise, or increase your fibre intake, having healthier and homemade snacks at the ready is imperative!


This week I have made a no-bake protein bar recipe! This recipe is amazing because it only takes 10 minutes to make and you have your protein bars for the week at the ready! They are also great if you have a sweet tooth like me for satisfying that craving. To be honest, they are very similar to your classic fridge cake just with extra protein! The protein sources in these bars come from the nut butter, oats and optional protein powder. I also sprinkle my protein bars with seeds for that extra fibre and to get in more plant diversity into my diet!

Makes: 6 bars. Preparation Time: 10 minutes + 1 hour for freezing


INGREDIENTS
  • 120g nut butter of choice

  • 70g oat flour (simply blitz rolled oats in a blender)

  • 30g protein powder of choice (I use a vanilla flavoured one. If you don't have protein powder, use an extra 30g oat flour instead)

  • 5tbsp (75ml) maple syrup/honey/agave syrup

  • 80g dark chocolate

  • 1 tbsp coconut oil

  • Sea salt

  • Seeds for sprinkling (I used pumpkin seeds, sunflower seeds and cacao nibs)

METHOD
  1. Mix the oat flour and protein powder together in a bowl

  2. Add the nut butter and syrup and combine well

  3. Line a loaf tin with baking paper and pour mixture into the tin. Flatten out with a spoon until it is an even thickness all over.

  4. Melt the dark chocolate and coconut oil in the microwave, checking and stirring at every 30 second interval.

  5. Pour melted chocolate mixture over your protein base. Tilt the tin to ensure you get an even spread.

  6. Sprinkle with seeds of choice.

  7. Place in the freezer for 1 hour. After 1 hour remove tin and slice your protein bars into 6 bars and enjoy!
