One Pan Creamy Harissa Salmon

Frying pan with harissa salmon in a creamy sauce with spinach and peas

HARISSA IS AN ELITE ADDITION TO ANY DISH

I absolutely love the warming but spicy kick of harissa, and it pairs fabulously with salmon and a creamy sauce! If you aren't a salmon fan, you can always swap it out for chicken or prawns. And what's even better about this dish? It's all cooked in one pan!

Frying pan with harissa salmon in a creamy sauce with spinach and peas

Serves: 2: Preparation and Cooking Time: 15 minutes


INGREDIENTS

  • 2 salmon fillets

  • 1 white onion

  • 1 garlic clove

  • 1-2tsp harissa paste (depending on spice tolerance)

  • 150ml light cream

  • 2 handfuls of spinach

  • 1/2 cup peas

  • 1 tsp dill

  • Salt and pepper to taste

  • Serving options: Try with pasta, rice or roast/mashed potato's

METHOD

  1. Start by dicing your onion and crushing your garlic. Using a large frying pan, hear 1 tbsp oil. Once hot, add your onion and garlic and fry for 1-2 minutes.

  2. Coat the top side of your salmon fillet with harissa paste, then add your salmon fillets to the frying pan.

  3. When your salmon is about 3/4 of the way cooked (the timing will differ depending on the cut of your salmon - you will also need to flip the salmon part way through as well), add in the cream, spinach, peas, dill and salt and pepper.

  4. Simmer for a further 4-5 minutes, ensuring the salmon is fully cooked.

  5. Serve piping hot with your carb of choice!
