Orange and Cranberry Loaf

ZESTY AND FESTIVE LOAF

Bake yourself happy this festive period with this delicious orange and cranberry loaf. Perfect for a snack throughout the day with your favourite festive drink! This recipe is super easy as everything just goes into the one bowl (yay, for minimal washing up!) and is packed with flavour from the fresh orange, juicy cranberries and warming honey flavour. It is really soft and fluffy as it is made with olive oil to replace the butter!


You can also easily make this recipe vegan, by replacing the honey with maple syrup and the eggs for flax eggs (see below for details on how to make this!).

Makes: 1 loaf. Prep Time: 15 minutes. Cooking Time: 1 hour.


INGREDIENTS

  • 2 oranges (zested and juiced)

  • 3 eggs or flax eggs (mix 3 tbsp milled flaxseeds with 7.5 tbsp water and leave to sit for 5 minutes)

  • 125ml honey or maple syrup

  • 85ml olive oil

  • 1tsp vanilla essence

  • 250g spelt flour (all-purpose plain flour can also be used)

  • 1tsp bicarbonate of soda

  • 1tsp baking powder

  • 90g dried cranberries

  • 50g icing sugar mixed with 30ml water (optional)

METHOD
  1. Preheat the oven to 180C. Grease and line a loaf tin with parchment paper.

  2. Zest and juice your oranges and put into a bowl. Add in the eggs, honey, olive oil and vanilla essence.

  3. Sieve in the spelt flour, bicarbonate of soda and baking powder and combine together.

  4. Finally fold in the cranberries.

  5. Pour the mixture into your loaf tin and bake for one hour. Test the loaf with a skewer, to ensure it comes out clean (that's how you know it's cooked through).

  6. Leave to cool on a cooling rack before drizzling with icing sugar mixture. Leave to harden and enjoy!
