Pesto Sausage Salad

AN EASY LUNCH

An easy and delicious lunch option, whether your packing it away into lunch boxes or as a perfect spring/summer option for hosting friends! As is my favourite thing with lunch prep - I love them to be quick, easy and delicious!

Makes: 3 lunches. Preparation Time: 10 minutes. Cooking Time: 25 minutes


INGREDIENTS
  • 6 sausages (veggie or normal - I opt for veggie!)

  • 1 courgette (sliced into semi-circles)

  • 1 red onion (thinly sliced)

  • 3 tbsp green pesto

  • 1 round lettuce (roughly chopped)

  • 12 cherry tomatoes (halved)

  • 1/3 cucumber (sliced into semi-circles)

METHOD

  1. Preheat your oven to 200C. Whilst the oven is warming, prepare your courgette and red onion.

  2. Next place your sausages, chopped courgette and red onion into a roasting tin. Dollop on your pesto and mix until well spread across the sausages and vegetables. Roast for 20-25 minutes (check sausage of choice cooking instructions).

  3. Whilst the sausages are cooking, prepare your lettuce, tomatoes and cucumber.

  4. Evenly spread the lettuce, cucumber and tomatoes across 3 lunch boxes.

  5. Once the sausages are cooked, leave to cool, before dividing equally across the 3 lunches.

  6. Store in the fridge and enjoy over the next 3 days.
