Protein Berry Porridge

MY FAVOURITE PORRIDGE RECIPE

This week I am sharing one of my go-to breakfast recipes which I enjoy at least a couple of times a week! Despite the fact we are in spring, those colder rainier days still tend to linger and so it's perfect if you are feeling something a little warmer in the morning.


This porridge is the best of combinations for textures - the smooth, creamy porridge with the soft stewed berries and the added crunch from the seeds! It also fills you up for the morning with it's high protein content from the oats, seeds and protein powder. I tend to use a vegan blend from a local shop in Norwich, but any protein powder of choice will do!



Serves: 2. Cooking Time: 10 minutes


INGREDIENTS

  • 1 cup rolled porridge oats

  • 1 cup of milk of choice (I use almond mylk)

  • 1 cup water

  • 2 tablespoon vanilla protein powder

  • 150g frozen mixed berries

  • 1 tbsp maple syrup/runny honey with extra for drizzling

  • Sprinkle of pumpkin seeds/sunflower seeds/hemp seeds on each portion

METHOD
  1. Combine oats and milk in a pan on a medium heat and cook for 2-3 minutes, stirring constantly.

  2. Take pan off the heat and stir in the protein powder and water. Return pan to the low-medium heat, and continue to cook for another 2-3 minutes, stirring constantly until smooth and creamy.

  3. Separately stew the frozen berries (either on a medium heat in a pan or for approx. 1 minute in the microwave). Once thawed, stir in maple syrup/honey

  4. Divide the porridge into 2 deep bowls and top with berries, seeds and a drizzle of maple syrup/honey.
