PERFECT AUTUMNAL TREAT
Happy Halloween! Now that your pumpkin's are carved and you have had your Halloween celebrations, why not use your lovely pumpkin to make a spiced pumpkin loaf! It is the perfect treat with a cup of tea on a cold autumn afternoon!

Makes: 1 loaf. Preparation Time: 20 minutes. Cooking Time: 55 minutes
INGREDIENTS
250g plain fine wholewheat flour (can substitute for plain flour)
200g light brown or coconut sugar
1 tsp bicarbonate of soda
1 tsp baking powder
2 tsp cinnamon
1/4 tsp mixed spice
1/4 tsp ground ginger
400g pumpkin puree (either out of a can or home made by roasting your pumpkin then blending in a blender)
3 tbsp melted coconut oil or butter
5 tbsp milk of choice
100g chocolate chunks or raisins
For the icing:
100g light cream cheese
40g icing sugar
1/2 tsp cinnamon
METHOD
Pre heat oven to 180C and line a loaf tin with baking paper.
Add all your dry ingredients (flour, sugar, bicarbonate of soda, baking powder and spices) into a bowl and whisk to make sure there are no clumps.
Then add the pumpkin puree, coconut oil and milk and mix well to ensure well combined.
Fold in your chocolate chunks or raisins.
Pour into your prepared loaf tin and cook for 50-55 minutes until a skewer comes out clean.
While the loaf is cooking, prepare your icing. Place the cream cheese in a bowl and whisk with an electric whisk for 2-3 minutes. Then use a sieve to add your icing sugar and cinnamon and whisk till well combined. Place in the fridge until needed.
Once loaf is cooked, leave to cool on a cooling rack before topping with your icing.
