Pumpkin Spice Porridge

AUTUMNAL PORRIDGE

Continuing the autumnal theme over the last few weeks, pumpkin spice porridge is such an excellent winter breakfast. The warming spices (especially the cinnamon and mixed spice) means that there is so much flavour, and compliments that of the pumpkin puree really well. You may be thinking it's a bit weird having pumpkin in a breakfast...? however it makes the porridge a really creamy and smooth consistency - as well as getting those extra veggies in your diet!




Serves: 1. Cooking Time: 5 minutes


INGREDIENTS

  • 1/2 cup oats

  • 1/2 cup milk of choice (I use hazelnut mylk)

  • 1/4 cup water

  • 3 tbsp pumpkin puree

  • 1 tbsp maple syrup

  • 1 tsp milled linseed

  • 1/4 tsp mixed spice

  • 1/4 tsp ginger

  • 1/2 tsp cinnamon

  • Pinch of nutmeg

  • To top: hazelnuts, runny almond butter, pumpkin seeds and coconut chips


METHOD

  1. Combine oats, milk and water in a sauce pan and place over a medium heat for approx 5 minutes. Add more or less oats/liquid depending on desired consistency!

  2. Add in pumpkin puree, linseed, cinnamon, mixed spice, ginger, nutmeg and maple syrup into the porridge once it is cooked and stir in well.

  3. Top with toppings of choice - see my preferred options above!
