Pumpkin Spice Smoothie Bowl

PUMPKIN RESCUE
Pumpkin spice smoothie bowl - packed full of autumnal spices and warming taste, as well as containing all the nutrition that pumpkin brings (see previous post here) and assists the #pumpkinrescue campaign (see here)- it has its sweetness from banana and maple syrup and is super creamy from the coconut milk and yogurt! I love adding a bit of crunch to the top to differ the texture - granola and seeds are the way forward with this!

Serves: 1. Cooking Time: 5 minutes
INGREDIENTS
1/2 cup pumpkin puree
1/4 cup coconut milk (from carton)
1 tbsp coconut yogurt (or plain Greek)
1 frozen banana
1 tbsp maple syrup
1/4 tsp cinnamon
1/4 tsp ground ginger
Pinch of nutmeg
To Top: Granola of choice (see The Happy Oat Super Seed and Fruit granola here) and 1 tbsp pumpkin seeds
METHOD
Place all the above ingredients in a blender and blend together until smooth.
Top with granola of choice and pumpkin seeds.
