Quick and Easy Shakshuka

BRUNCH?

Super quick and easy shakshuka for all your brunch needs! Excellent for when you have that little bit more time in the morning to spend in the kitchen! It is also super filling and full of flavour - I hope you enjoy it as much as I do!

Serves: 2. Cooking Time: 30 minutes


INGREDIENTS

  • 1 white onion

  • 1 clove garlic

  • 1 green bell pepper

  • 1 red bell pepper

  • 1 tsp ground cumin

  • 1 tsp sweet smoked paprika

  • 1/2 tsp ground coriander

  • 1 tbsp olive oil

  • 1 400g tin of chopped tomatoes

  • 4 eggs

  • 100g feta

  • Salt and Pepper

  • Sourdough bread to serve

METHOD

  1. Prepare your vegetables: dice the onion, crush the garlic and slice the bell peppers. Heat the olive oil in a pan over a medium heat. Fry the onion and garlic until the onion is soft and translucent.

  2. Add in the peppers, and fry for another 2-3 minutes along with the cumin, paprika, coriander and salt and pepper to taste.

  3. Stir in the chopped tomatoes and simmer for 3 mins.

  4. Next make 4 wells and crack an egg into each. Cook until the whites of the egg are cooked. Serve with crumbled feta and some chunky sourdough bread.
