Simple Tofu Rice Stir-fry

TOFU STIRFRY

As someone who did not used to like tofu at all a year or so ago, I learnt that it is all in the seasoning to make it absolutely delicious! Tofu is a great plant based protein and works excellently in a quick and easy rice stir-fry! It is an easy alternative to meat with all the same benefits! This recipe is very versatile in what you can pair your tofu with! Swap out the rice for noodles, and mix up the veggies to whatever you have in the fridge!

Serves: 4. Cooking Time: 30 minutes.


INGREDIENTS

For the tofu:

  • 1 block of tofu (I use 'Cauldron foods' tofu)

  • 2 tbsp Corn flour

  • 2 tbsp light soy sauce

  • 1 tbsp rice vinegar

  • 1 tbsp honey or maple syrup

  • 1 tbsp sesame oil

  • 2 crushed garlic cloves

  • 1 tsp ginger

  • salt and pepper


For the Stir fry:

  • 150g mangetout

  • 3-4 handfuls of spinach

  • 1 small tin of sweetcorn

  • 250g uncooked brown rice

  • 2 tbsp soy sauce

  • Sesame seeds to top

METHOD

  1. Start by cooking your brown rice according to packet instructions.

  2. Next prepare your tofu. Cut your block of tofu up into bite-size cubes and place in a bowl. Toss with the corn flour and a dash of salt and pepper.

  3. Prepare your dressing for the tofu by, mixing soy sauce, rice vinegar, maple syrup, sesame oil, garlic and ginger together in a bowl and set to the side.

  4. Heat 1 tbsp oil in a frying pan over a medium meat and once the oil is hot, fry your corn-flour covered tofu in the pan for approx. 5 minutes until golden brown. Once golden, reduce the heat of the frying pan and add in your soy sauce mix. Ensure the tofu is well coated and cook for a further 3-4 minutes.

  5. Set tofu aside and in a larger sauce pan heat 1 tbsp oil and lightly fry the mangetout for 2-3minutes. Add in your spinach, sweetcorn, cooked rice, soy sauce, tofu and combine well until spinach is wilted.

  6. Serve piping hot and top with a sprinkling of sesame seeds.
