Smoky Beans on Toast

A TWIST ON BEANS ON TOAST

Beans on toast is a classic isn't it? Why not give beans on toast a twist by giving them a beautiful smoky flavour and making them from scratch! You may be thinking, this is a lot of hassle for something I can get out a tin! Well this simply only takes 15 minutes, and 10 of those minutes are letting the beans simmer! To give these beans the smoky flavour I have used smoked paprika and harissa paste. I love these flavours - they are so rich and go so well with the tomato sauce! Furthermore, by making these homemade, you are easily getting 1 of your 5 a day in there - and if you want more veggies, why not add spinach or kale!

Serves: 2. Cooking Time: 15 minutes


INGREDIENTS
  • 1/2 a small onion (finely diced)

  • 1 garlic clove (crushed)

  • 1 tbsp olive oil

  • 1 can cannellini beans (235g when drained)

  • 1/2 can chopped tomatoes (200g)

  • 1 tsp smoked paprika

  • 1/2 tsp harissa paste (optional but recommended)

  • 1/4 tsp sugar

  • Salt and pepper to taste

  • Parsley to garnish

  • Bread to toast (I love sourdough or a seeded loaf)

METHOD
  1. Pour olive oil into a frying pan, heat on a medium heat and add onions and garlic and fry until soft.

  2. Add the cannellini beans, paprika and harissa paste and mix together

  3. Next add the chopped tomatoes, sugar, salt and pepper and mix together. Let this mixture simmer for 10 minutes.

  4. When your beans are almost ready, toast your bread and top with your smoky beans and garnish with parsley.
