COOKIES BUT MAKE IT CHRISTMAS
Why not start your December festivities by making these simple spiced Christmas cookies? They require a small amount of ingredients and is a great festive fun activity for anyone to get involved! They are also vegan (not that anyone would know!) - so great for those who require a vegan diet or are dairy free.

Makes: 16-20 cookies. Preparation Time: 30 minutes. Cooking Time: 10 minutes
INGREDIENTS:
100g plain flour
100g ground almonds
50g soft brown sugar
1/2 tsp ground ginger
1/4 tsp ground cinnamon
6 tbsp maple syrup
To decorate:
85g dark/white/milk chocolate
Pumpkin seeds
Dried Cranberries
Desiccated coconut
METHOD:
Place the plain flour, almonds, sugar, ginger, cinnamon and maple syrup into a food processor and mix until the dough comes together. Tip the dough out and kneed gently. Shape your dough into a ball and cover with clingfilm. Leave to rest for 20 minutes.
Preheat your oven to 160C fan/ 180C.
Dust a clean work surface with flour and roll the dough out with a rolling pin (aim for thickness of a £1 coin). Using a star cutter (size of your choice!), cut the cookies out and place onto a baking tray lined with baking paper. (With the dough left over, bring together and re-roll out to cut out more cookies).
Bake for 10 minutes, or until the cookies are slightly golden at the edges. Remove from the oven and leave to cool on a cooling rack. (TIP: The cookies may seem soft but they will harden as they cool - leaving them to cook for longer will result in a hard cookie).
Once the cookies have nearly cooled, melt your chocolate of choice in a saucepan/microwave - stirring frequently to avoid burning.
Using a spoon, carefully spread onto your cookies and then decorate each cookie with cranberries, pumpkin seeds and desiccated coconut. Allow chocolate to harden before eating - Enjoy!
