Stewed Apple and Cinnamon Cake

APPLE CAKE

This time of year is definitely the time for all thing's cinnamon spiced! and what better to go together than apple and cinnamon!


My family have 2 large apple trees in there garden, which means they always have so many cooking apples! Every time I visit, I go away with a bag of apples! In order to preserve them I stew them down and freeze them. This simply involves: peeling, de-coring and chopping the apples up, placing them into a pot with a splash of water over a medium heat until all the apples becomes soft and almost into a puree. It really is that easy!


The stewed apple in this cake, makes the cake super moist and the flavour of the apple and cinnamon is deliciously warming. Perfect for an afternoon snack!

Serves: 16 slices. Prep Time: 10 minutes. Cooking Time: 1 hour.

INGREDIENTS
  • 640g stewed apples

  • 150g melted butter or coconut oil

  • 2 eggs

  • 1 tsp vanilla essence

  • 140g coconut or light brown sugar

  • 340g self raising flour

  • 2 tsp baking powder

  • 2 tsp cinnamon

METHOD
  1. Preheat the fan assisted oven to 150C . Grease and line with baking paper a 22cm cake tin.

  2. Mix all the wet ingredients together into a mixing bowl (stewed apples, coconut oil (or butter), 2 eggs and vanilla essence).

  3. Next combine all the dry ingredients (sugar, flour, baking powder, and cinnamon) with the wet ingredients until well mixed.

  4. Pour the ingredients into your prepared cake tin and bake for 1 hour, or until cooked through (use a skewer and place it in the centre of the cake, if it comes out clean - the cake is done!)

  5. Leave to cool, before dusting with icing sugar.
