Tasty Scrambled Turmeric Tofu + What is Tofu

TOFU
Since doing veganuary, this has been the only time I have actually went and physically bought tofu. I have always seen it as a bit of a weird 'sponge' texture and very flavourless - anyone else agree? or maybe I am out numbered with people who like that about tofu!
Anyway, I have found that the tastiest way to have tofu - is scrambled with lots of spices! I can definitely say I am missing eggs this month and this has come to a close second to filling the 'egg sized hole' in my life at the moment.
WHY EAT TOFU?
Tofu is a food made of condensed soy milk that is pressed into solid white blocks, which can come in varying consistencies (silken, normal, firm, extra firm). The process that does this is quite similar to cheese making [1].
According to BBC Good Food, tofu is an excellent source of protein and contains all nine of the essential amino acids (amino acids are organic compounds that combine to form proteins. Amino acids and proteins are the building blocks of life). It is also a valuable plant source of iron and calcium and the minerals manganese and phosphorous. In addition to this, it also contains magnesium, copper, zinc and vitamin B1 [2].
Why are these nutrients important? Soya Protein is believed to reduce levels of bad cholesterol (LDL) [3]. There is also some evidence to suggest that phytoestrogen content of soya may lower the risk of breast cancer [4]and can help relieve symptoms of the menopause [5].
Is it the be all and end all if you eat a largely plant based diet and don't eat tofu? - No! Tofu is an excellent source of protein but their are plenty of other plant based foods which are also high in protein, such as beans, pulses, nuts and seeds.
Serves: 2. Cooking Time: 5 minutes
INGREDIENTS
200g tofu
1 tbsp olive oil
1/2 tsp ground turmeric
1/2 tsp ground paprika
1 tbsp nutritional yeast
8 cherry tomatoes (sliced)
Salt and pepper to taste
METHOD
In a frying pan, heat the oil over a medium heat.
While the oil is heating, in a bowl, roughly mash the tofu in a bowl with a fork.
Add the tofu to the frying pan, along with the turmeric, paprika and nutritional yeast and saute for 3-4 minutes. Halfway through, add the sliced cherry tomatoes into the mix.
Add salt and pepper to the tofu as required, and serve alongside a brunch, on toast or just on its own!
