The easiest (vegan) dark chocolate truffles

THE PERFECT GIFT

Delicious decadent dark chocolate truffles - what isn't to love?! These truffles only need 2 ingredients and are super easy to make! They are also perfect to make for little treats around the festive season, or why not give as a home-baked gift this Christmas?


Makes: approx. 15 truffles. Preparation Time: 10 minutes


INGREDIENTS

  • 200g 70% dark chocolate (finely chopped)

  • 6 tbsp full fat coconut milk

  • cacao powder and chopped hazelnuts for coating (optional)


METHOD

  1. Place the chopped chocolate in a medium-sized mixing bowl and melt over a saucepan of boiling water.

  2. In a separate small mixing bowl, add coconut milk and microwave until warm but not boiling (approx. 30 seconds in a 700W microwave).

  3. Next, add coconut milk to the melted chocolate and cover the mixing bowl with a cooking lid or towel in order to keep the heat in. Leave to stand for 5 minutes. Then lift cover and use a wooden spoon to gently stir the mixture until completely melted and smooth.

  4. Place your truffle mixture in the refrigerator to chill uncovered for 1.5-2 hours, or until almost completely solid. (TIP: Dip a knife into the middle of the bowl and if the knife comes out mostly clean it is ready to scoop, if not - continue refrigerating).

  5. Next, prepare a small dish of cacao powder and another of chopped hazelnuts for rolling (optional).

  6. Scoop out small balls of the mixture, then use your hands to form the chocolate into balls.

  7. Coat in cocoa/ cacao powder or chopped hazelnuts and shake off excess, then set aside. Continue until all chocolate is scooped.

  8. Enjoy truffles immediately, or store in the fridge for later to maintain freshness. (TIP: Prior to serving, let the truffles come to room temperature for 15 minutes).
