The 'Jennifer Aniston' Salad

IS IT WORTH THE HYPE?

You may have been around when the 'Jennifer Aniston' Salad took social media by storm. Unsurprisingly, it is named this as its a salad she supposedly ate when on set filming 'Friends'. Having tried this salad many times - I can confirm it is worth the hype, so thought I would share it on here!


I make this commonly as part of my lunch prep for work - but it would also be a great one for accompanying a meal with grilled meats or fish!

Serves: 4 Preparation and Cooking Time: 25 minutes


INGREDIENTS

  • 1 cup (185g) of bulgur wheat or quinoa

  • 2 cups of water

  • 1 cucumber (chopped)

  • 1.5 400g cans of chickpeas

  • 1 red onion (diced)

  • 1/2 cup (small handful) of fresh mint (chopped)

  • 1/2 cup (small handful) of fresh parsley (chopped)

  • 1/2 cup (80g)of de-shelled pistachios (roughly chopped)

  • 1/2 cup (75g) feta (crumbled)

    For dressing:

  • 1/4 cup lemon juice

  • 1/4 cup extra virgin olive oil

  • 1/2 tsp salt

  • 1/4 tsp black pepper


METHOD

  1. Start by adding your quinoa or bulgur wheat to a pot, add the water and cover with a lid. Cook for approx. 15-20minutes on a low-medium heat. Allow to cool once cooked.

  2. Prepare your vegetables as described above. Then to a large bowl, add your prepared cucumber, chickpeas (drained), red onion, parsley, mint, feta and pistachios and mix together.

  3. Prepare your dressing by adding the lemon juice, olive oil, salt and pepper to a bowl and mixing.

  4. Add your cooled bulgur wheat/quinoa to your large bowl along with your dressing then combine well.

  5. Serve in one large bowl or divide between 4 lunch boxes and store in the fridge.
