Tofu Chocolate Mousse

A PROTEIN PACKED DESSERT

I decided to try out the viral tofu chocolate mousse - and let me tell you, do not let the tofu put you off! It uses a form of tofu called 'silken' tofu which makes the texture really smooth and you combined with the only 3 other ingredients - it tastes amazing! It also serves up 9g protein per dessert which is great for getting in that extra protein as well as a delicious dessert.

Serves: 4 Preparation and Cooking Time: 10 minutes plus chilling time


INGREDIENTS

  • 300g block of silken tofu

  • 100g good quality dark chocolate

  • 2 tsp cocoa powder

  • 2 tsp honey

  • Pinch of salt


METHOD

  1. Melt the dark chocolate in a saucepan.

  2. Add the tofu, cocoa powder, honey, dark chocolate and salt into a blender and blend until smooth (I use my nutribullet).

  3. Divide into 4 dishes and leave to set in the fridge for 1-2hours. Enjoy on it's own or add some extra toppings of choice!
