Vegan Lemon Curd

SIMPLE AND DELICIOUS

Lemon curd is one of my favourite spreads! I love it on toast, porridge, yogurt and spread in cakes! Do you love lemon curd as much as me? Why not try out this simple vegan lemon curd recipe - honestly you can't tell the difference that its vegan!

Makes: 1 jar - serves 16-20. Cooking Time: 20 minutes


INGREDIENTS

  • Juice of 4 lemons

  • Zest of 1 lemon

  • 1 cup of white sugar

  • 2 tablespoons of corn flour

  • 1 cup of non-dairy milk (I use soya milk)

  • 1/4 tsp turmeric

METHOD

  1. In a sauce pan, mix the sugar and corn flour together.

  2. Next add in the lemon juice, lemon zest, non-dairy milk and turmeric and whisk together.

  3. Turn the hob onto a medium heat and continue to whisk the lemon curd mixture for 5-10 minutes. (TIP: If after 5-7 minutes you are seeing no change in the thickness of your lemon curd, get a separate saucepan, place 1/2 tsp corn flour in it and slowly pour your lemon curd mixture into your new pan - ensuring to continually whisk so you don't get any lumpy corn flour in your curd!).

  4. Once your curd has thickened, set to the side to cool before transferring to an airtight jar.

  5. Enjoy immediately or store in the fridge for up to one week.
