Vegan Mince Pies with homemade Mince Pie Filling

A CHRISTMAS GO TO
Is it really Christmas without those delicious mince pies? One of the reasons I love mince pies is the amazing mix of spices that smell and taste beautiful with the fruit. These mince pies are great for entertaining at this festive time of the year, as well as cater for different dietary needs.
Not only are these mince pies vegan, but they use fruit and natural food syrups to bring the sweetness to the mince pies. They are also low in carbohydrates - using ground almonds for the pastry element of the mince pie!


Makes: approx 12 mince pies. Prep and Cooking Time: 1 hr 30 mins
INGREDIENTS
For the mincemeat:
100g raisins
120g sultanas
80g dried cranberries
2 apples (finely diced)
Juice from 2 oranges
1 tsp vanilla essence
1 tbsp melted coconut oil
1 tsp ground cinnamon
1 tsp ground ginger
For the pastry:
2 cups ground almonds
3 tbsp almond butter
3 tbsp maple syrup
1/4 tsp bicarbonate of soda
Pinch of salt
Almond milk to bring dough together (or milk of choice)
METHOD
Preheat the oven to 170C and grease muffin tin with a little bit of coconut oil
In a mixing bowl, combine the ground almonds, bicarbonate of soda and salt together.
Over a low-medium heat, melt the almond butter and maple syrup together in a saucepan - stir continuously until smooth
Add the almond butter/maple syrup mixture to the dry ingredients and stir together. Add 1 teaspoon of almond milk at a time until the mixture comes together into a smooth dough.
Place the dough in the fridge and chill for 20 minutes.
While dough is chilling, prepare your mincemeat filling. Simply place the chopped apples, dried fruit, vanilla essence, orange juice, coconut oil and spices into a saucepan and simmer for 30 minutes on a low-medium heat.
Once your dough has chilled, cut out 2 sheets of baking paper, and place dough between the two, and use a rolling pin to roll out the dough. Use a round cookie cutter to cut out approx. 12 rounds of dough.
Place each round of dough in a muffin tin (pressing the dough up against the tin) and bake in the oven for around 10 minutes or until golden brown.
Whilst pastry is in the oven, use this time to re-roll the remaining dough and use a holly leaf cutter (or whichever shape you like!) to cut the dough for the top of your mince-pies
Remove pastry from the oven and fill each pastry case with a heaped teaspoon of your mince pie filling and place holly leaf on the top with a brush of almond, milk on top.
Place back in oven and bake for approx. 12 minutes. Allow to cool and sprinkle with a little icing sugar and silver glitter for a sparkly twist!
