Warming Parsnip Soup

MY FAVOURITE SOUP

This week I thought I would share one of my favourite soup recipes! We are at the stage of the year when the weather is attempting to become like spring in the UK, however it is still pretty chilly! This soup was one of my favourites growing up, as my mum used to (and still does!) make it all the time! It is also perfect for your lunches for the week (provided you have a microwave you can heat it up in!) or even just to have some friends round for lunch with for soup and some crusty bread.


Serves: 5. Cooking Time: 30 minutes


INGREDIENTS

  • 700g Parsnips

  • 1 litre hot vegetable stock (add in more if consistency is too thick for your personal preference)

  • 1 tbsp olive oil

  • 1 onion

  • 3 cloves garlic

  • 2 tsp curry powder

  • 1 tsp black pepper

  • 5 tbsp Greek yogurt

  • Parsley to garnish

METHOD

  1. Firstly, peel and chop the parsnips and set aside.

  2. Heat the olive oil on a medium heat in a soup pot, and whilst this is heating dice the onion. Add the onion to the pot until soft and translucent then add finely chopped garlic to the pan.

  3. Next, add the parsnips to the pan, along with the curry powder and black pepper and lightly fry for 2-3 minutes.

  4. Then add the hot vegetable stock to the pot and simmer for around 20 minutes until parsnips are soft.

  5. Blend soup together with a hand blender, or electric blender (depending which you have).

  6. Serve into bowls with 1 tbsp of Greek yogurt swirled on top and a garnish of parsley
