Pancake Day Special: Blueberry and Vanilla Protein Pancakes

PROTEIN PANCAKES
Pancakes are one of my favourite foods all year round, not just for pancake day! These pancakes are not only delicious but packed with extra protein from the vanilla protein powder and the oats! I love maple syrup on these, but they can be topped with whatever your favourite toppings are!

Serves: 3-4. Cooking Time: 15 minutes
INGREDIENTS
2 cups of rolled oats
2.5 cups of milk of choice (I use almond or soya mylk)
1 heaped tbsp of vanilla protein powder
1 tsp vanilla essence
1/2 tsp baking powder
1 cup blueberries (frozen or fresh)
Maple syrup for drizzling
METHOD
Blend all the above ingredients together apart from the blueberries in a blender until smooth.
Stir in the blueberries
Heat a non-stick frying pan (use a little cooking oil spray) on a medium heat and tablespoon the pancake mixture onto the frying pan. I tend to use 1-2 tablespoons of mixture for each pancake. Fry for 2-3 minutes each side.
Stack the pancakes and top as desired! My favourite is with a drizzle of maple syrup!
